I've read a few other blogs that share their weekly meal plan each week and really like this idea. I was doing great at meal planning until we moved and summer arrived and really want to get back into the groove again so I thought I'd share my meal plan here on my blog. I'm hoping to post it on Sunday, when I typically do my meal plan but we'll see how it goes.
This week's plan:
Monday: Black Bean and Corn Burritos- The recipe calls for barley but since I can't have barley I used quinoa instead. These were delicious!
Tuesday: Potato, Green Bean and Tomato Stew
- I got this recipe from a vegetarian cookbook I found at the grocery store.
Wednesday: Tomato Sauce with Onion and Butter
- I found the link to this recipe from Lisa's blog and since I have 60+ jars of tomatos in my basement I thought I'd give it a whirl.
Thursday: Autumn Sausage Casserole
- I found the link to this recipe on Melanie's blog and it sounds so yummy. I can't wait to try it. This morning when I was at my friend, Rachelle's house, she actually had the cookbook (Make It Fast, Cook It Slow) that was written from the blog Melanie had linked. I definitely want to try more recipes from the blog.
Friday: Pesto Chicken and Sweet Potatoes
- I have some leftover pesto in the fridge that needs to be used up and this sounds really yummy.
Saturday: Autumn Sausage Casserole
- We're having a potluck with friends and my plan is to take this casserole. If it turns out well on Thursday, I'm planning to make it again on Saturday.
